And what pairs well with everything? Bacon. And what pairs well with apples? Red onions. But it is quickly becoming one of my favorite cheeses. This historic structure houses relics from across eight centuries and is fascinating for tourists visiting the area. At the top of the village is the Gruyères Castle-or Château de Gruyères, once home to the counts of Gruyères.
